दिवाली पर बनाये खस्ता मठरी | Khasta Mathari Recipe | Namak Pare Recipe

Ingredients
1)  RICE FLOUR – 1 CUP
2) UDAD DAAL FLOUR – 1/2 CUP
3) BESAN – 3 TBSP
4) RED CHILLY POWDER – 1 TSP
5) SALT – TO TASTE
6) CURRY LEAVES – 1/2 TSP CHOPPED
7) PINCH OF ASAFEATIDA
8) OIL – 1 TSP

9) CREAME – 1/2 TSP

METHOD

Take rice flour in a big bowl and udad dal flour , besan flour, salt , red chilly powder, chopped curry leaves, creame, pinch of asafeatida and 1 tsp oil. Mix them well. Keep adding little water and kneed to form smooth dough like paratha. Apply little oil and kneed to make it smooth.

Put a pan on gas with low flame and add oil for fry.

Make 6 equal parts from dough and prepare peda shape. Take one peda on working board and sprinkle rice flour over it. Roll it to make big roti shape. With help of fork, make holes over it.

Take diamond shape mould and press it on roti to make diamond shape mathari. Prepare all matharies in same way . Use left over to make further matharies.

Now when oil is hot, add matharies in it and fry till become crispy and golden brown in colour. Take them out in plate and fry rest of matharies in same way.

After cool down properly, store in air tight jar and use for month.

Enjoy diamond mathari in snacks specially during Diwali festival.
